Chocolate Sugar Cookies 
I recently bought these cute and colourful cookie cutters the other day and I wanted to try them out. I browsed through a range of recipes, especially Bake at 350, who makes the most amazing decorated sugar cookies. Unfortunately, I didn’t have hours on hand to wait for them to set, so I decided to create my own version of cookies by adapting a recipe from Two Peas & Their Pod.
Actually, I first saw this recipe and these cookies from Cora Cakes’ adaption (her blog is pretty awesome as well, so check it out!). Cora’s cookies looked beautiful and simple and I wanted to recreate something similar using my cookie cutters.  But since the recipe is using dough which needs to be rolled into balls, I decided to change the quantities a little to allow me to roll it out and cut cookies from them. 
Have fun with decorating these cookies. Make a royal icing, ice with melted chocolate, put sprinkles, or sugar and white chocolate like mine! Eat them with a glass of milk!
Chocolate Sugar Cookies
Ingredients
2 cups plain flour
1 teaspoon baking soda
2/3 cup cocoa powder
100g unsalted butter
1/2 cup caster sugar
1/2 cup light brown sugar
1 teaspoon vanilla extract
1/4 cup Nutella
1/4 cup milk
white chocolate buttons
caster sugar extra, for sprinkling
Method
In a medium sized bowl, add flour, baking soda and cocoa powder together, and mix to combine. In the bowl of a stand mixer, place the butter and the sugars and beat until light and fluffy, roughly two minutes. Add in the vanilla extract, and beat for another 30 seconds. Add in the Nutella and beat until all is combined and incorporated.
Add half the flour mixture and half the milk into the batter and mix until combined. Then add the remaining flour and milk and mix again until the dough comes together. Using your hands, bring the dough together to form a ball. If dough still feels sticky, add a bit more flour until it becomes a smooth cookie dough. Once rolled into a ball, flatten into a disc, wrap with cling film, then place in the fridge for 20 minutes to chill.
Preheat the oven to 180C. Line two baking trays with non-stick baking paper. Lightly flour the surface of the workspace and roll the chilled dough until it is 5-7mm thick (note that these cookies won’t spread or rise as much, so depending how thick you want your cookies will determine how much rolling you do). Using any cookie cutter shape, cut out cookies and line them on the baking tray. Sprinkle cookies with caster sugar and place a white chocolate button in the centre. Repeat with remaining cookie dough. 
Bake cookies for 10-15 minutes, or until cookies are cooked through. Remove from oven and let them cool on the tray for 5 minutes, then transfer to a cooling rack to cool completely.
